How the calculation works

The calculator uses a mass-balance equation: addition (g) = starting weight × (target Brix − current Brix) ÷ (ingredient Brix − target Brix). Water is 0° Brix and dry sucrose is treated as 100° Brix equivalent. Always mix thoroughly and recheck with a refractometer.
